Storage & handling

Remove damaged outer leaves, rinse the head, and wash again after cutting if dirt is trapped between the leaves.

Oven-Roasted Cabbage WedgesThick cabbage wedges roasted until browned outside and tender inside.+

Ingredients

1 small green cabbage
2 tablespoons olive oil
1 teaspoon garlic powder
Salt
Black pepper
Lemon wedges

Instructions

Heat the oven to 425°F.
Cut the cabbage through the core into 6 to 8 wedges so each wedge stays together.
Brush both sides with olive oil and season with garlic powder, salt, and pepper.
Roast for 20 minutes, turn carefully, and roast 10 to 15 minutes more until browned and tender.
Finish with lemon juice and serve hot.

Ingredients

6 cups finely shredded cabbage
1 grated carrot
1/3 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon sugar or honey
1 teaspoon Dijon mustard
Salt and pepper

Instructions

Place the cabbage and carrot in a large bowl.
Whisk mayonnaise, vinegar, sweetener, mustard, salt, and pepper in a small bowl.
Pour the dressing over the vegetables and toss thoroughly.
Cover and refrigerate for at least 30 minutes.
Toss again, adjust seasoning, and serve cold.

Simple Cabbage and Tomato SoupA light, economical soup that turns a large head of cabbage into a comforting meal.+

Ingredients

1 tablespoon oil
1 chopped onion
2 chopped carrots
3 minced garlic cloves
6 cups chopped cabbage
1 can diced tomatoes
6 cups vegetable or chicken broth
1 teaspoon dried thyme
Salt and pepper

Instructions

Heat the oil in a soup pot and cook the onion and carrots for 5 minutes.
Add garlic and stir for 30 seconds.
Add cabbage, tomatoes, broth, thyme, salt, and pepper.
Bring to a boil, then lower the heat and simmer for 25 to 30 minutes.
