Green Beans
Green beans are young edible bean pods with a fresh flavor and crisp-tender texture.
How it compares to Snap peas
Both are eaten pod and all, but green beans are firmer and usually cooked, while snap peas are sweeter and commonly eaten raw.
Storage & handling
- Trim stem ends and remove strings if present.
- Cook until crisp-tender or fully tender according to the dish.
- Refrigerate unwashed beans in a breathable bag.
3 Ways to Cook Green Beans
Green Beans AlmondineGreen beans with toasted almonds and lemon.+
Ingredients
- 1 pound green beans
- 2 tablespoons butter
- 1/3 cup sliced almonds
- 1 lemon
- Salt
Instructions
- Blanch beans in salted water until crisp-tender.
- Drain and cool briefly.
- Toast almonds in butter.
- Add beans and toss until hot.
- Finish with lemon and salt.

Ingredients
- 1 pound green beans
- 1 tablespoon oil
- 3 garlic cloves
- 1 tablespoon soy sauce
- 2 tablespoons water
Instructions
- Trim and dry beans.
- Heat oil in a wok.
- Stir-fry beans for 4 minutes.
- Add garlic, soy sauce and water.
- Cover 2 minutes, then uncover and cook until tender.

- 1 pound blanched beans
- 8 ounces mushrooms
- 1 cup milk
- 1 tablespoon flour

Instructions
- Heat oven to 375 degrees F.
- Cook mushrooms in butter.
- Stir in flour, then gradually add milk.
- Simmer until thick and combine with beans.
- Top with onions and bake 20 minutes.
