Hmong Sticky Corn

Hmong sticky corn, also called waxy or glutinous corn, is culturally important in Hmong cooking and is prized for its dense, pleasantly chewy texture.

How it compares to Sweet corn

Sweet corn is juicy and sugary; sticky corn is less sweet, starchier and much chewier because its starch is mostly amylopectin.

Storage & handling

  • Use fresh ears while kernels are still tender.
  • Cook longer than ordinary sweet corn.
  • Soak dried kernels overnight before simmering.
  • The word glutinous describes texture and does not mean the corn contains gluten.

3 Ways to Cook Hmong Sticky Corn

Boiled Hmong Sticky CornThe simplest traditional way to enjoy its chewy texture.+

Ingredients

  • 4 ears Hmong sticky corn
  • Water
  • Salt, optional

Instructions

  1. Remove husks and silk.
  2. Place ears in a pot and cover with water.
  3. Bring to a boil.
  4. Reduce heat and simmer 20 to 35 minutes until chewy-tender.
  5. Drain and serve warm.

Hmong Sticky Corn RiceSticky corn cooked with rice for a hearty staple.+

Ingredients

  • 1 cup fresh corn kernels
  • 1 cup sticky rice
  • Water
  • Pinch of salt

Instructions

  1. Rinse rice until water is mostly clear.
  2. Soak rice 4 hours or overnight.
  3. Combine drained rice and corn in a steamer basket.
  4. Steam 25 to 35 minutes, turning once.
  5. Season lightly and serve warm.

Sticky Corn and Chicken SoupA comforting soup with chewy kernels and tender chicken.+

Ingredients

  • 2 cups sticky corn kernels
  • 1 pound chicken pieces
  • 6 cups broth
  • 1 sliced ginger knob
  • 2 scallions
  • Salt

Instructions

  1. Combine chicken, broth and ginger in a pot.
  2. Simmer 20 minutes.
  3. Add fresh corn; use presoaked corn if dried.
  4. Simmer 30 to 40 minutes until corn and chicken are tender.
  5. Season and garnish with scallions.
