Okra
Okra is a tender green pod with edible seeds and natural thickening power.

Okra has a similar fresh green flavor but a softer interior whose mucilage thickens soups and stews.
Storage & handling
- Choose small firm pods; oversized pods may be woody.
- Wash and dry before cutting.
- Keep pods whole or use high heat for a less slippery texture.
3 Ways to Cook Okra
Roasted OkraHigh-heat roasting gives crisp edges.+
Ingredients
- 1 pound okra
- 1 tablespoon oil
- Salt
- Pepper
Instructions
- Heat oven to 450 degrees F.
- Dry okra and trim stems.
- Toss with oil and seasoning.
- Spread in one layer.
- Roast 15 to 20 minutes, turning once.

Ingredients
- 2 cups sliced okra
- 2 cups corn
- 1 tablespoon oil
- 1 tomato, chopped
- Salt
- Cayenne
Instructions
- Heat oil in a skillet.
- Cook okra for 5 minutes.
- Add corn and tomato.
- Season with salt and cayenne.
- Cook 5 to 7 minutes more.

Ingredients
- 1 pound shrimp
- 2 cups okra
- 1 onion
- 1 bell pepper
- 1 can tomatoes
- 4 cups broth
- Cajun seasoning
Instructions
- Soften onion and pepper in oil.
- Add okra and cook 5 minutes.
- Add tomatoes, broth and seasoning.
- Simmer 20 minutes.
- Add shrimp and cook until opaque.
