Poblanos are broad, dark-green Mexican peppers with earthy flavor and mild-to-medium heat. When dried, they are called ancho chiles.

Ingredients

  • 6 poblano peppers
  • 2 cups shredded melting cheese
  • 2 cups tomato sauce
  • 1 teaspoon cumin
  • 1/2 chopped onion
  • Oil
  • Salt

Instructions

  1. Char the poblanos under a broiler or over a flame, turning until blistered.
  2. Cover for 10 minutes, then peel gently and cut a slit in each pepper.
  3. Remove the seeds while keeping the peppers whole.
  4. Fill with cheese and place in an oiled baking dish.
  5. Season the tomato sauce with cumin and onion and pour it around the peppers.
  6. Bake at 375°F for 20 to 25 minutes until hot and melted.

Creamy Roasted Poblano SoupA smooth, smoky soup with roasted peppers, potato, and corn.+

Ingredients

  • 4 roasted and peeled poblanos
  • 1 tablespoon butter
  • 1 chopped onion
  • 1 diced potato
  • 3 cups broth
  • 1 cup corn
  • 1/2 cup cream
  • Salt

Instructions

  1. Melt butter and cook the onion until soft.
  2. Add potato and broth and simmer until the potato is tender.
  3. Add roasted poblanos and half of the corn.
  4. Blend until smooth, then return to low heat.
  5. Stir in remaining corn and cream, warm gently, season, and serve.

Ingredients

  • 3 roasted poblanos, sliced
  • 2 cups corn kernels
  • 1 sliced onion
  • 1 tablespoon oil
  • 1/2 teaspoon cumin
  • Salt
  • 8 tortillas
  • Lime
  • Cheese or avocado

Instructions

  1. Heat oil and cook the onion until lightly browned.
  2. Add corn and cook until golden in spots.
  3. Stir in poblano strips, cumin, and salt.
  4. Warm the tortillas.
  5. Fill with the poblano mixture and top with lime, cheese, or avocado.
