Scrub under running water and trim roots and tops.
Save fresh undamaged greens for cooking.
Remove greens before storing so roots stay crisp.

3 Ways to Cook Radish

Quick-Pickled RadishesCrisp tangy refrigerator pickles.+

Ingredients

1 bunch sliced radishes
1/2 cup vinegar
1/2 cup water
1 tablespoon sugar
1 teaspoon salt

Instructions

Pack radishes in a clean jar.
Heat vinegar, water, sugar and salt until dissolved.
Pour brine over radishes.
Cool, cover and refrigerate.
Wait at least 1 hour before serving.

Roasted RadishesA mild, juicy cooked side dish.+

Ingredients

1 pound radishes
1 tablespoon olive oil
Salt
Pepper
Lemon

Instructions

Heat oven to 425 degrees F.
Halve the radishes.
Toss with oil, salt and pepper.
Roast 20 to 25 minutes.
Finish with lemon.

Ingredients

2 cups radish greens
1/3 cup walnuts
1 garlic clove
1/3 cup olive oil
1/3 cup Parmesan
Lemon juice

Instructions

Wash and dry the greens thoroughly.
Pulse greens, walnuts and garlic.
Drizzle in oil while blending.
Stir in Parmesan and lemon.
Season and serve with pasta or bread.
