Scallions are young onions with mild white bases and fresh green tops. Nearly the entire stalk is edible and useful both raw and cooked.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup hot water
  • 1 tablespoon sesame oil
  • 1 cup sliced scallions
  • 1/2 teaspoon salt
  • Oil for frying

Instructions

  1. Mix flour and hot water into a soft dough, knead briefly, and rest covered for 30 minutes.
  2. Divide the dough, roll each piece thin, and brush with sesame oil.
  3. Sprinkle with scallions and salt, roll into a rope, then coil it.
  4. Flatten and roll each coil into a pancake.
  5. Pan-fry in a thin layer of oil until crisp and golden on both sides.

Ingredients

  • 1 cup finely sliced scallions
  • 2 tablespoons minced ginger
  • 1/2 teaspoon salt
  • 1/3 cup neutral oil
  • 1 teaspoon soy sauce, optional

Instructions

  1. Place scallions, ginger, salt, and optional soy sauce in a heatproof bowl.
  2. Heat the oil until shimmering.
  3. Carefully pour the hot oil over the scallion mixture.
  4. Stir and cool for 10 minutes.
  5. Serve immediately or refrigerate in a clean container.

Scallion Fried RiceA fast meal that turns cold rice and scallions into a savory side or main dish.+

Ingredients

  • 3 cups cold cooked rice
  • 1 bunch sliced scallions, whites and greens separated
  • 2 beaten eggs
  • 2 tablespoons oil
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Black pepper

Instructions

  1. Heat 1 tablespoon oil in a wok or skillet and scramble the eggs; remove them.
  2. Add remaining oil and cook the scallion whites for 30 seconds.
  3. Add cold rice and stir-fry until hot and separated.
  4. Add soy sauce, sesame oil, pepper, eggs, and most of the scallion greens.
  5. Toss for 1 minute and garnish with the remaining greens.
