3 Ways to Cook Walnuts

Walnut PestoA rich basil sauce for pasta or vegetables.+

Ingredients

2 cups basil
1/3 cup toasted walnuts
1 garlic clove
1/3 cup olive oil
1/3 cup Parmesan
Salt

Instructions

Pulse basil and garlic.
Add walnuts and process finely.
Drizzle in oil.
Stir in Parmesan.
Season and serve.

Cinnamon Candied WalnutsA crisp sweet snack.+

Ingredients

4 cups walnuts
2 egg whites
1 cup sugar
1 tablespoon cinnamon
1/2 teaspoon salt

Instructions

Heat oven to 300 degrees F.
Whisk egg whites until frothy.
Coat walnuts, then toss with sugar, cinnamon and salt.
Spread on parchment.
Bake 40 minutes, stirring halfway; cool completely.

Spinach-Walnut PkhaliA Georgian-inspired spinach and walnut spread.+

Ingredients

1 pound cooked spinach
1 cup walnuts
2 garlic cloves
1 tablespoon vinegar
1 teaspoon coriander
Salt

Instructions

Squeeze spinach very dry.
Grind walnuts and garlic.
Mix with spinach, vinegar, coriander and salt.
Process to a coarse paste.
Chill before serving.
