Zucchini
Zucchini is a tender summer squash with mild flavor and thin edible skin.
How it compares to Cucumber
They look similar, but zucchini is usually cooked and has softer, denser flesh; cucumber is crisper and usually eaten raw.
Storage & handling
- Wash and trim both ends; peeling is normally unnecessary.
- Do not eat zucchini with an intensely bitter taste.
- Avoid overcooking if you want a firm texture.
3 Ways to Cook Zucchini
Grilled ZucchiniSmoky tender slices with simple seasoning.+
Ingredients
- 2 zucchini
- 1 tablespoon olive oil
- Salt
- Pepper
- Lemon
Instructions
- Slice zucchini lengthwise.
- Brush with oil and season.
- Heat grill to medium-high.
- Grill 3 to 4 minutes per side.
- Finish with lemon.

Zucchini Noodles with TomatoA light vegetable noodle dish.+
Ingredients
- 3 spiralized zucchini
- 2 cups cherry tomatoes
- 2 garlic cloves
- 1 tablespoon oil
- Parmesan
Instructions
- Heat oil and briefly cook garlic.
- Add tomatoes and cook until softened.
- Add zucchini noodles.
- Toss 2 to 3 minutes.
- Top with Parmesan.

- 2 cups grated zucchini
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup flour
- 1/3 cup cheese
- Oil
Instructions
- Salt zucchini and rest 10 minutes.
- Squeeze out liquid.
- Mix with egg, flour and cheese.
- Form small patties.
- Pan-fry until browned on both sides.
